Poached Guavas in a Light Vanilla and Maple Syrup

Guavas are plentiful and cheap around April. The scent of this fruit could be argued to be its main attraction; its heady scent is spellbinding. With just a little cooking the fruit itself is also a delight in both texture and flavour.

Instructions
  1. There is no need to peel them – you can eat the whole fruit, skin, seeds and all
  2. Place the guava in a heavy pan, cut side up
  3. Add the remaining ingredients
  4. Bring to a gentle simmer for 8-10 minutes
  5. Remove the fruit to a serving bowl
  6. Turn up the heat and reduce the liquid and spices to a thin syrup for 5–10  minutes
  7. Cool for a few minutes before pouring the syrup over the cooked fruit. Serve with dollops of crème fraiche or fresh cream.
