Instructions
  1. Take a cool mixing bowl and add cold flour
  2. Add the salt and sugar with the butter cubes.
  3. Use your cool fingertips to rub the butter into the flour; the aim is to keep the butter from melting, so work quickly and lightly.
  4. You will create a variety of sizes of crumb when the butter and flour combine, but there should be small and larger lumps of butter not fully rubbed into the flour; this is what creates a light and flaky pastry.
  5. The water and lemon juice should be added to the butter flour mix, just enough to bring it all together
  6. Chill until the butter has hardened again; this takes up to an hour and is best done in the fridge rather than the freezer or it will become unworkable.
  7. Once it is well chilled use this pastry to make a free form rustic fruit tart.
